Garlic Butter Salmon with Asparagus & Roasted Potatoes

Ingredients

Salmon

  • 2–3 salmon fillets

  • Salt & black pepper

  • 1/2 tsp paprika

  • 1 tbsp olive oil


Vegetables

  • 250 g baby potatoes, halved

  • 1 bunch Asparagus

  • 2 tbsp olive oil

  • Salt & pepper


Garlic Butter Sauce

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • Fresh dill or parsley


Instructions

Step 1: Roast the Potatoes

  • Preheat oven to 200°C (390°F)

  • Toss potatoes with olive oil, salt, pepper

  • Roast 20–25 minutes until golden


Step 2: Add Asparagus

  • Add asparagus to the tray

  • Drizzle with oil and season

  • Roast another 10–12 minutes


Step 3: Cook the Salmon

  • Season salmon with salt, pepper, paprika

  • Heat oil in a pan

  • Sear salmon 3–4 minutes per side until golden


Step 4: Make Garlic Butter

  • In same pan, melt butter

  • Add garlic → cook until fragrant

  • Add lemon juice + zest

  • Spoon sauce over salmon


Step 5: Serve

  • Plate potatoes + asparagus

  • Add salmon on top

  • Drizzle extra garlic butter

  • Garnish with fresh herbs
