Ingredients

Crepes

  • 1 cup all-purpose flour

  • 2 eggs

  • 1 ¼ cups milk

  • 1 tbsp sugar

  • 1 tbsp melted butter

  • 1 tsp vanilla extract

  • Pinch of salt

Filling

  • 200 ml heavy cream

  • 3 tbsp powdered sugar

  • 1 tsp vanilla extract

  • 1 cup fresh strawberries, sliced

Decoration

  • Whole strawberries

  • Mint or thyme sprigs

  • Powdered sugar


Instructions

1. Make the Crepe Batter

In a bowl whisk together:

  • flour

  • eggs

  • milk

  • sugar

  • melted butter

  • vanilla

  • salt

Mix until smooth. Let batter rest 10 minutes.


2. Cook the Crepes

  1. Heat a non-stick pan over medium heat.

  2. Pour a small ladle of batter and swirl to make a thin layer.

  3. Cook 1 minute per side until lightly golden.

Repeat until batter is finished.


3. Prepare the Cream

Whip heavy cream with powdered sugar and vanilla until soft peaks form.


4. Assemble the Pouches

  1. Place a crepe flat on a plate.

  2. Add whipped cream and strawberries in the center.

  3. Gather the edges of the crepe to form a pouch.


5. Decorate

Top with:

  • sliced strawberries

  • herbs or mint

  • light dusting of powdered sugar

Serve immediately.
