Steak with Peppercorn Sauce (Steak Frites)

Ingredients

Steak

  • 2 beef steaks (ribeye or sirloin)

  • Salt & black pepper

  • 1 tbsp olive oil

  • 1 tbsp butter

Peppercorn Sauce

  • 1 tbsp crushed black peppercorns

  • 2 cloves garlic, minced

  • 100 ml heavy cream

  • 50 ml beef broth

  • 1 tbsp butter

  • 1 tsp Dijon mustard (optional)

Sides

  • French fries

  • Fresh parsley (for garnish)


Instructions

1. Cook the Steak

  • Season steak generously with salt and pepper.

  • Heat oil in a pan until very hot.

  • Sear steak 2–4 minutes per side (depending on thickness and doneness).

  • Add butter and baste for extra flavor.

  • Rest the steak for 5 minutes before slicing.


2. Make the Peppercorn Sauce

  • In the same pan, sauté garlic and peppercorns.

  • Add beef broth and simmer briefly.

  • Pour in heavy cream and stir.

  • Add butter and mustard, cook until thick and smooth.


3. Serve

  • Slice steak.

  • Pour sauce over the top.

  • Serve with crispy fries and garnish with parsley.
