1. Prepare the Crust

Crush crackers into fine crumbs

Mix with melted butter until combined

Press firmly into the bottom of a springform pan

Chill in the fridge for 20–30 minutes
2. Make the Filling

In a bowl, beat cream cheese until smooth

Add ricotta, parmesan, and mix well

Add eggs one at a time, mixing gently

Stir in garlic, olive oil, salt, pepper, and herbs

Mix until creamy (do not overmix)
3. Bake the Cheesecake

Preheat oven to 160°C (320°F)

Pour filling over crust

Smooth the top
