🍅 Savory Cheesecake with Tomato Topping

🧾 Ingredients

Crust

  • 200g crackers (digestive or savory biscuits)

  • 100g unsalted butter, melted


Savory Cheesecake Filling

  • 400g cream cheese (room temperature)

  • 150g ricotta cheese (or sour cream)

  • 100g grated parmesan cheese

  • 2 eggs

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp dried herbs (thyme, oregano, or basil)


Tomato Topping

  • 300g cherry tomatoes (halved)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tbsp balsamic vinegar

  • 1 tsp sugar

  • Salt & pepper to taste

  • Fresh herbs (basil or parsley)


Garnish (optional)

  • Fresh mint leaves

  • Edible flowers


👩‍🍳 Instructions

1. Prepare the Crust

  • Crush crackers into fine crumbs

  • Mix with melted butter until combined

  • Press firmly into the bottom of a springform pan

  • Chill in the fridge for 20–30 minutes


2. Make the Filling

  • In a bowl, beat cream cheese until smooth

  • Add ricotta, parmesan, and mix well

  • Add eggs one at a time, mixing gently

  • Stir in garlic, olive oil, salt, pepper, and herbs

  • Mix until creamy (do not overmix)


3. Bake the Cheesecake

  • Preheat oven to 160°C (320°F)

  • Pour filling over crust

  • Smooth the top

👉 Optional (for extra creamy texture):
Bake in a water bath

  • Bake for 45–55 minutes

  • Center should still be slightly jiggly

Turn off oven, crack the door open, and let it cool slowly inside

Then refrigerate for at least 3 hours (preferably overnight)


4. Make the Tomato Topping

  • Heat olive oil in a pan

  • Add garlic and sauté briefly

  • Add tomatoes, cook until soft and slightly jammy

  • Stir in balsamic vinegar, sugar, salt, and pepper

  • Simmer until thick and glossy

  • Let cool completely


5. Assemble

  • Spoon tomato topping over chilled cheesecake

  • Garnish with herbs, mint, or edible flowers
