🥔 Roasted Potatoes with Baked Feta and Garlic


Ingredients:

  • 1–2 large baking potatoes, washed and cubed

  • 7 oz (200 g) block of feta cheese

  • 2 tablespoons olive oil, divided

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 head of garlic, top sliced off (leave cloves in skin)

  • 1 lemon, quartered

  • 1 tablespoon honey

  • ¼ cup (20 g) fresh basil, chopped (or parsley for variation)


🍳 Instructions:

  1. Preheat oven to 400°F (200°C).
    Line a baking sheet or roasting dish with parchment paper.

  2. Prep the potatoes:
    Toss cubed potatoes with 1 tablespoon olive oil, thyme, oregano, salt, and pepper. Spread them out evenly on one side of the baking dish.

  3. Add garlic & lemon:
    Place the garlic head (cut-side up) and lemon wedges in the dish with the potatoes.

  4. Place the feta:
    Put the whole block of feta cheese in the center or on the other side of the pan. Drizzle with the remaining olive oil and a light sprinkle of oregano.

  5. Roast:
    Roast in the oven for 35–40 minutes, or until potatoes are golden and crispy, and feta is soft and lightly browned.

  6. Finishing touch:
    Once out of the oven, drizzle the roasted feta with honey while warm for a sweet-savory balance.

  7. Serve:
    Squeeze roasted lemon over everything, mash the garlic cloves out of their skins and mix into the feta or potatoes if desired.

  8. Garnish:
    Sprinkle chopped fresh basil or herbs of choice over the top and serve warm!
