Loaded Garlic Cheddar Mashed Potatoes 2 medium Yukon Gold potatoes, peeled and cubed 4 cloves garlic, minced 2 tbsp butter ½ cup shredded cheddar cheese ¼ cup heavy cream (or milk) 2 tbsp chopped chives (optional) Salt & freshly cracked black pepper to taste
Caramelized Onions & Roasted Asparagus 1 large yellow onion, thinly sliced 1 tbsp olive oil ½ tsp sugar (optional, helps with caramelization) Salt & freshly cracked black pepper to taste 1 bunch asparagus, trimmed 1 tbsp olive oil Pinch of salt & pepper
Instructions
1. Roast Asparagus & Caramelize Onions Preheat oven to 400°F (200°C). Toss trimmed asparagus with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet. In a skillet over medium-low heat, add 1 tbsp olive oil and thinly sliced onions. Season with salt and pepper, and sugar if using. Cook slowly, stirring occasionally, for 20-30 minutes, or until deeply golden brown and caramelized. Roast asparagus for the last 10-15 minutes of the onion cooking time, until tender-crisp.
2. Prepare the Mashed Potatoes Place cubed potatoes and minced garlic in a saucepan. Cover with cold water and bring to a boil. Reduce heat and simmer until potatoes are very tender, about 15-20 minutes. Drain well and return potatoes and garlic to the saucepan. Add butter and mash until smooth. Stir in shredded cheddar cheese and heavy cream (or milk). Mix until cheese is melted and potatoes are creamy. Stir in chives (if using). Season with salt and pepper. Keep warm.
3. Sear the Cajun Steak Bites Pat the steak cubes dry and season generously with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add butter and let it melt. Add the seasoned steak bites to the hot skillet in a single layer (work in batches if necessary). Sear for 2-3 minutes per side for medium-rare, or to your desired doneness. During the last minute of cooking, add any accumulated juices back into the skillet to create a simple sauce.
4. Assemble the Bowls Divide the loaded garlic cheddar mashed potatoes between two bowls. Top with the seared Cajun-seasoned steak bites. Spoon any of the Cajun butter sauce from the steak skillet over the steak and potatoes. Arrange the caramelized onions and roasted asparagus around the steak.
