🌿 Creamy Garlic Spinach (African-style or Soul-food inspired)


Ingredients:

  • 1 large bunch fresh spinach, chopped (or 2 cups frozen spinach, thawed)

  • 1 tablespoon olive oil or butter

  • 1 small onion, finely chopped

  • 2–3 cloves garlic, minced

  • 1/4 cup heavy cream or coconut milk (for dairy-free)

  • 1 tablespoon cream cheese or grated cheese (optional for extra creaminess)

  • Salt and pepper to taste

  • Pinch of nutmeg (optional but adds amazing warmth)

  • 1 small chili pepper (optional, for heat)

  • Optional: bouillon cube or seasoning powder (e.g., Knorr) for a deeper savory flavor


🍳 Instructions:

  1. Prep the spinach
    Wash spinach thoroughly and chop if using fresh. If using frozen, make sure to drain out excess liquid.

  2. Sauté the aromatics
    Heat olive oil or butter in a pan over medium heat. Add chopped onion and sauté until soft and golden. Add garlic and chili (if using) and stir until fragrant (about 30 seconds).

  3. Cook the spinach
    Add the spinach to the pan. Cook for 3–5 minutes, stirring occasionally, until wilted and the liquid starts to evaporate.

  4. Make it creamy
    Pour in heavy cream or coconut milk. Stir in cream cheese or shredded cheese if desired. Season with salt, pepper, and a pinch of nutmeg.

  5. Simmer
    Let it simmer for 2–3 minutes until thick and creamy. Taste and adjust seasoning.

  6. Serve hot
    Perfect as a side dish with rice, yams, grilled chicken, beans, or even pasta!


💡 Tips:

  • You can mix spinach with kale or collard greens for extra texture.

  • Add mushrooms or bell peppers for variety.

  • Store leftovers in an airtight container in the fridge for up to 2 days.
