Pan-Seared Steak with Mashed Potatoes, Bacon, and Asparagus

Ingredients

Steak

  • 2 beef steaks (ribeye, sirloin, or filet mignon), about 200–250 g each

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • 2 cloves garlic, crushed

  • 1 sprig fresh rosemary or thyme

  • Salt and freshly ground black pepper, to taste

Mashed Potatoes

  • 500 g potatoes, peeled and cut into chunks

  • 3 tablespoons butter

  • 1/3 cup warm milk or cream

  • Salt and black pepper, to taste

Bacon

  • 4–6 slices bacon, cut into small pieces

Asparagus

  • 1 bunch asparagus, trimmed

  • 1 teaspoon olive oil

  • Salt and black pepper, to taste


Instructions

Step 1: Prepare the Mashed Potatoes

Bring a pot of salted water to a boil. Add the potatoes and cook for 12–15 minutes until very tender. Drain well.

Mash the potatoes while hot. Add butter and warm milk gradually, mashing until smooth and creamy. Season with salt and black pepper. Cover and keep warm.

Step 2: Cook the Bacon

In a skillet over medium heat, cook the bacon pieces until crispy and golden. Remove and place on paper towels to drain excess fat. Set aside.

Step 3: Cook the Asparagus

In the same skillet or a clean pan, heat olive oil over medium heat. Add the asparagus and season lightly with salt and pepper. Sauté for 4–5 minutes until tender but still bright green. Remove from heat and set aside.

Step 4: Cook the Steak

Remove the steaks from the refrigerator 20 minutes before cooking. Pat dry and season generously with salt and black pepper on both sides.

Heat a heavy skillet (preferably cast iron) over high heat. Add olive oil. When hot, place the steaks in the pan and sear for 2–3 minutes per side until a deep brown crust forms.

Reduce heat to medium. Add butter, garlic, and herbs to the pan. Spoon the melted butter over the steaks for 1–2 minutes. Cook to desired doneness (medium-rare: internal temperature about 54–57°C / 130–135°F).

Remove steaks from the pan and let rest for 5 minutes.

Step 5: Assemble and Serve

Place a generous scoop of mashed potatoes on each plate and top with crispy bacon. Add the asparagus on the side and place the rested steak next to it. Spoon a little pan butter over the steak if desired.

Serve immediately.
