Ingredients

Grilled Chicken

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 1/2 teaspoon dried oregano

  • Salt and black pepper, to taste

  • Juice of 1/2 lemon

Rice

  • 1 cup cooked white rice (jasmine or basmati preferred)

Salad & Toppings

  • 1 ripe avocado, sliced

  • 1 cup cherry tomatoes, halved

  • 2 cups lettuce or mixed greens

  • Fresh parsley or cilantro, chopped

Yogurt Sauce

  • 1/2 cup plain Greek yogurt

  • 1 tablespoon lemon juice

  • 1 tablespoon olive oil

  • 1 small clove garlic, grated

  • Salt and black pepper, to taste


Instructions

Step 1: Marinate the Chicken

In a bowl, combine olive oil, lemon juice, garlic powder, paprika, oregano, salt, and black pepper. Rub the mixture evenly over the chicken breasts. Let marinate for at least 10–15 minutes for better flavor.

Step 2: Grill the Chicken

Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5–6 minutes per side, or until fully cooked and nicely charred on the outside.
Remove from heat and let rest for 5 minutes, then slice into strips.

Step 3: Prepare the Yogurt Sauce

In a small bowl, mix Greek yogurt, lemon juice, olive oil, garlic, salt, and black pepper until smooth and creamy. Adjust seasoning to taste.

Step 4: Assemble the Bowl

Divide the cooked rice between two bowls. Arrange sliced grilled chicken on top. Add avocado slices, cherry tomatoes, and lettuce around the bowl.

Step 5: Finish and Serve

Drizzle yogurt sauce over the bowl or serve it on the side. Sprinkle with fresh herbs and a little black pepper before serving.
