Mini Raspberry Cream Dessert Cups
Ingredients
Cake Base

1 cup sponge cake crumbs or ladyfinger biscuits

1 tbsp melted butter (optional)
Raspberry Layer
-
1 cup fresh raspberries
-
2 tbsp sugar
-
1 tsp lemon juice
Cream Layer
-
250 ml heavy cream
-
150 g mascarpone cheese
-
3 tbsp powdered sugar
-
1 tsp vanilla extract
Decoration
-
Fresh raspberries
-
Butter cookies or biscuit rings
-
Powdered sugar for dusting
Instructions

1. Prepare the Raspberry Filling

In a small saucepan combine raspberries, sugar, and lemon juice.

Cook for 3–5 minutes until slightly soft and syrupy.

Let cool completely.
2. Make the Cream
-
Beat heavy cream until soft peaks form.
-
In another bowl mix mascarpone, powdered sugar, and vanilla.
-
Fold the whipped cream into the mascarpone mixture until smooth.
3. Assemble the Dessert Cups
-
Add sponge cake crumbs or crushed biscuits to the bottom of each glass.
-
Spoon in a layer of raspberry mixture.
-
Add a thick layer of cream.
-
Repeat layers if desired.
4. Decorate
Top with:

whipped cream swirls

fresh raspberries
-
cookie ring
-
light dusting of powdered sugar
