Mini Raspberry Cream Dessert Cups

Ingredients

Cake Base

  • 1 cup sponge cake crumbs or ladyfinger biscuits

  • 1 tbsp melted butter (optional)

Raspberry Layer

  • 1 cup fresh raspberries

  • 2 tbsp sugar

  • 1 tsp lemon juice

Cream Layer

  • 250 ml heavy cream

  • 150 g mascarpone cheese

  • 3 tbsp powdered sugar

  • 1 tsp vanilla extract

Decoration

  • Fresh raspberries

  • Butter cookies or biscuit rings

  • Powdered sugar for dusting


Instructions

1. Prepare the Raspberry Filling

  1. In a small saucepan combine raspberries, sugar, and lemon juice.

  2. Cook for 3–5 minutes until slightly soft and syrupy.

  3. Let cool completely.


2. Make the Cream

  1. Beat heavy cream until soft peaks form.

  2. In another bowl mix mascarpone, powdered sugar, and vanilla.

  3. Fold the whipped cream into the mascarpone mixture until smooth.


3. Assemble the Dessert Cups

  1. Add sponge cake crumbs or crushed biscuits to the bottom of each glass.

  2. Spoon in a layer of raspberry mixture.

  3. Add a thick layer of cream.

  4. Repeat layers if desired.


4. Decorate

Top with:

  • whipped cream swirls

  • fresh raspberries

  • cookie ring

  • light dusting of powdered sugar


Result:
A light, creamy, and fruity dessert with soft cake, tangy raspberries, and fluffy cream — perfect for parties or elegant café-style desserts.
