Korean Soy-Braised Pork Belly

Ingredients

Pork

  • 700 g pork belly (or pork shoulder)

  • 4 cups water

  • 3 slices ginger

  • 3 cloves garlic

  • 2 tbsp rice wine


Braising Sauce

  • ½ cup soy sauce

  • 2 tbsp brown sugar

  • 1 tbsp honey

  • 1 tbsp gochujang (Korean chili paste)

  • 1 tsp sesame oil

  • ½ tsp black pepper


Garnish

  • 2 green onions, sliced

  • 1 tsp sesame seeds


Side Dishes (Optional)

  • Kimchi

  • Pickled radish

  • Fresh lettuce or herbs


Instructions

1. Prepare the Pork

  1. Place pork belly in a pot with water, ginger, garlic, and rice wine.

  2. Simmer for 15 minutes to remove impurities.

  3. Remove and rinse the pork.


2. Braise the Pork

  1. In a pot, combine soy sauce, sugar, honey, gochujang, sesame oil, and pepper.

  2. Add pork and enough water to cover halfway.

  3. Simmer on low heat for 60–70 minutes until tender.


3. Slice

  1. Remove pork from the pot.

  2. Slice into thin pieces.


4. Finish

  1. Spoon the braising sauce over the sliced pork.

  2. Garnish with green onions and sesame seeds.


5. Serve

Serve with steamed rice, kimchi, and pickled vegetables.
