Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C) . Lightly grease a 9x13-inch baking dish.
Step 2: Make the Meatloaf Layer
In a mixing bowl, combine the ground beef, breadcrumbs, milk, egg, grated onion, garlic, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined—avoid overmixing.
Press the meat mixture evenly into the bottom of the prepared baking dish.
Step 3: Prepare the Mashed Potatoes
Boil the peeled and cubed potatoes in salted water for 15–20 minutes , or until fork-tender. Drain well.
Mash the potatoes with the milk, butter, salt, and pepper until smooth and creamy.
Step 4: Assemble the Casserole
Spread the mashed potatoes evenly over the meatloaf layer.
Sprinkle the shredded cheddar cheese over the potatoes, followed by the crumbled bacon.
Step 5: Bake
Bake for 30–35 minutes , or until the meatloaf is cooked through (internal temperature of 160°F/71°C ) and the cheese is melted and bubbly.
Step 6: Garnish and Serve
Let the casserole cool for 5 minutes before garnishing with sour cream, green onions, and any optional toppings like chives or jalapeños.
