Honey-Mustard Glazed Chicken with Crispy Potatoes

Ingredients

Honey-Mustard Chicken

  • 4 boneless, skinless chicken thighs or breasts

  • 3 tablespoons honey

  • 2 tablespoons Dijon mustard

  • 1 tablespoon whole-grain mustard (optional)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon paprika

  • ½ teaspoon dried thyme or rosemary

  • Salt and black pepper, to taste

Crispy Potatoes

  • 600 g baby potatoes, halved

  • 2 tablespoons olive oil

  • ½ teaspoon paprika

  • ½ teaspoon garlic powder

  • Salt and black pepper, to taste

Optional Garnish

  • Fresh parsley or thyme

  • Lemon wedges

Instructions

1. Prepare the Potatoes

Preheat the oven to 220°C (425°F).

Bring a pot of salted water to a boil and parboil the potatoes for 8–10 minutes until just tender. Drain well and let them steam dry.

Transfer potatoes to a baking tray, drizzle with olive oil, and season with paprika, garlic powder, salt, and pepper. Toss to coat evenly and

spread in a single layer.

2. Make the Honey-Mustard Glaze

In a small bowl, whisk together honey, Dijon mustard, whole-grain mustard (if using), olive oil, garlic, paprika, thyme, salt, and black pepper.

3. Season and Cook the Chicken

Heat a large oven-safe skillet over medium-high heat.

Add a small amount of oil and sear the chicken for 3–4 minutes per side until lightly golden.

Brush generously with the honey-mustard glaze.

4. Roast Everything

Place the skillet with the chicken in the oven.

At the same time, roast the potatoes on a separate rack.

Roast for 20–25 minutes, brushing the chicken once more with glaze halfway through, until:

  • Chicken is cooked through and glossy

  • Potatoes are golden and crispy on the outside

5. Rest and Serve

Remove from the oven and let the chicken rest for 5 minutes.

Serve the honey-mustard chicken alongside crispy potatoes. Garnish if desired.
