Ingredients

For the Salad

  • 8 large shrimp, peeled and deveined

  • 2 soft-boiled eggs, halved

  • 2 cups arugula (rocket)

  • 1 cup roasted sweet potato cubes

  • 1 ear corn, cooked and sliced into rounds

  • 1 cucumber, thinly sliced or rolled

  • 1 cup cherry tomatoes, halved

  • 2 small calamansi limes or 1 lime, sliced

For the Shrimp Seasoning

  • 1 tbsp olive oil

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp chili flakes

  • Salt and black pepper to taste

For the Honey-Lime Dressing

  • 2 tbsp olive oil

  • 1 tbsp fresh lime juice

  • 1 tsp honey

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

Instructions

Step 1: Roast the Sweet Potatoes

  1. Preheat oven to 400°F (200°C).

  2. Toss sweet potato cubes with olive oil, salt, and pepper.

  3. Roast for 20–25 minutes until golden and tender.

Step 2: Cook the Eggs

  1. Bring water to a boil.

  2. Cook eggs for 7 minutes for jammy centers.

  3. Transfer to ice water and peel.

Step 3: Grill the Shrimp

  1. Season shrimp with olive oil, paprika, garlic powder, chili flakes, salt, and pepper.

  2. Grill or pan-sear for 2 minutes per side until pink and slightly charred.

Step 4: Make the Dressing

Whisk together:

  • Olive oil

  • Lime juice

  • Honey

  • Dijon mustard

  • Salt and pepper

Step 5: Assemble the Salad

  1. Arrange arugula in a large bowl or plate.

  2. Add roasted sweet potatoes, corn rounds, cucumber ribbons, and cherry tomatoes.

  3. Place grilled shrimp around the salad.

  4. Add halved soft-boiled eggs in the center.

  5. Garnish with lime slices.

Step 6: Serve

Drizzle generously with honey-lime dressing and serve immediately.
