1 kg pork ribs (baby back or spare ribs with bone)

3 tablespoons honey

2 tablespoons fish sauce

1 tablespoon oyster sauce

1 tablespoon cooking oil

1 teaspoon ground black pepper

1 teaspoon MSG (optional)

1 teaspoon garlic powder (or 1 clove garlic, minced)

1 teaspoon chili powder (optional, for a spicy kick)

1 small shallot, finely chopped

1 thumb-sized piece of ginger, minced

1 teaspoon five-spice powder (optional)

1. Prepare the Ribs
Rinse the ribs with diluted salt water, then blanch them in boiling water with a few slices of smashed ginger to remove any odor.
Rinse again with clean water, drain well, and cut into manageable pieces.
2. Marinate the Ribs
In a large bowl, mix the ribs with honey, fish sauce, oyster sauce, cooking oil, pepper, MSG, garlic, shallots, ginger, and five-spice powder.
Let the ribs marinate for at least 2 hours — ideally 4–6 hours or overnight in the fridge — to allow the flavors to fully absorb.
3. Cook the Ribs
Choose your preferred cooking method:

Preheat the oven to 200°C (392°F). Place ribs on a baking tray lined with foil or parchment paper. Roast for 25–30 minutes, flipping halfway through and brushing with extra honey for a caramelized finish. -
Charcoal Grill Method:
Grill over medium-hot charcoal, turning occasionally. Brush with extra honey during grilling to enhance the glaze and aroma. -
Air Fryer Method:
Place ribs in the air fryer basket. Cook at 180°C (356°F) for 15 minutes, flip, then cook another 5–10 minutes until golden brown.
4. Serve and Enjoy
Once the ribs are cooked through and beautifully golden, transfer to a serving plate. Sprinkle with toasted sesame seeds or chopped green onions if desired.
Serve with fresh herbs, cucumber slices, and your choice of dipping sauce — such as spicy chili sauce or lime chili salt.
