Grilled Chicken Salad with Creamy Herb Dressing

Ingredients

For the Grilled Chicken

  • 2 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp black pepper

  • ¾ tsp salt

  • ½ tsp dried oregano or thyme

  • 1 tbsp lemon juice


For the Salad Base

  • 4 cups mixed lettuce (romaine, butter lettuce, or leaf lettuce)

  • 1 cup cherry tomatoes, halved

  • 1 medium cucumber, sliced

  • ¼ red onion, thinly sliced

  • Fresh parsley or chives, finely chopped


For the Creamy Herb Dressing

  • ½ cup Greek yogurt (or sour cream for richer taste)

  • 1½ tbsp olive oil

  • 1 tbsp lemon juice or white wine vinegar

  • 1 small garlic clove, minced

  • 2 tbsp fresh parsley, finely chopped

  • 1 tbsp fresh dill or chives, chopped

  • Salt & black pepper, to taste

  • 2–3 tbsp water or milk (to thin, optional)


Instructions

1. Marinate the Chicken

  1. Pat the chicken dry with paper towels.

  2. In a bowl, mix olive oil, paprika, garlic powder, salt, pepper, oregano, and lemon juice.

  3. Coat chicken evenly.

  4. Cover and marinate at least 20 minutes (up to 8 hours in the fridge for deeper flavor).


2. Grill the Chicken

  1. Heat a grill pan or outdoor grill over medium-high heat.

  2. Grill chicken 5–7 minutes per side, until golden with grill marks and internal temp reaches 165°F (74°C).

  3. Remove from heat and rest 5 minutes.

  4. Slice into thick strips or chunks.


3. Prepare the Dressing

  1. Whisk Greek yogurt, olive oil, lemon juice, garlic, herbs, salt, and pepper until smooth.

  2. Adjust thickness with water or milk if needed.

  3. Chill for 5–10 minutes for best flavor.


4. Assemble the Salad

  1. Add lettuce to a large bowl.

  2. Top with cucumber, tomatoes, red onion.

  3. Add grilled chicken pieces.

  4. Drizzle generously with creamy herb dressing.

  5. Finish with extra herbs and cracked black pepper.


Tips & Variations

  • Want extra heat? Add chili flakes or cayenne to the chicken rub.

  • Dairy-free vibe: swap yogurt with dairy-free yogurt or tahini + lemon.

  • Meal-prep friendly: store chicken, salad, and dressing separately (keeps fresh 2–3 days).
