Garlic Butter Grilled Lobster Tails

2 lobster tails (5–7 oz each), thawed if frozen
3 tbsp unsalted butter, melted
2 cloves garlic, finely minced
1 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp lemon zest (optional, but recommended)
½ tsp paprika (or smoked paprika for deeper flavor)
¼ tsp salt (adjust to taste)
¼ tsp black pepper
1 tbsp fresh parsley, finely chopped
Lemon wedges, for serving

Prepare the lobster tails
Using kitchen scissors, cut down the center of the shell lengthwise, stopping just before the tail fin. Gently pull the shell apart and lift the meat, resting it on top of the shell (but keep it attached at the base).
Make the garlic butter
In a small bowl, mix melted butter, olive oil, garlic, lemon juice, lemon zest, paprika, salt, and black pepper until well combined.
Season the lobster
Brush the garlic butter generously over the exposed lobster meat, making sure it seeps into the crevices. Reserve a little butter for basting while cooking.
Grill the lobster
Preheat grill to medium-high heat (about 400°F / 200°C).
Place lobster tails shell-side down on the grill. Grill for 8–10 minutes, basting once or twice with remaining garlic butter, until the meat is opaque, firm, and lightly charred on top.
Tip: Do not flip—grilling shell-side down prevents overcooking.
Finish and serve
Remove from grill, sprinkle with fresh parsley, and serve immediately with lemon wedges and extra melted butter if desired.
Lobster is perfectly cooked when the internal temperature reaches 135–140°F (57–60°C).
If no grill is available, you can broil the lobster tails on high for 7–9 minutes.
Serve with crusty bread, roasted vegetables, or a light salad for a full meal.
