Beef Stir-Fry Noodles

Ingredients

For the Beef Marinade

  • 300 g beef sirloin or flank steak, thinly sliced against the grain

  • 1 tbsp soy sauce

  • 1 tsp cornstarch

  • 1 tsp sesame oil

  • ½ tsp sugar

  • ½ tsp ground black pepper

For the Noodles

  • 200 g egg noodles (or wheat noodles)

  • Water for boiling

Vegetables

  • 1 small onion, sliced

  • 1 small carrot, julienned

  • 1 cup bean sprouts

  • 2–3 stalks green onions, chopped

  • 1 cup green vegetables (green beans, bok choy, or scallions)

Stir-Fry Sauce

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp dark soy sauce (for color, optional)

  • 1 tsp sugar

  • 1 tsp sesame oil

  • 2–3 tbsp water or beef stock

For Cooking

  • 2 tbsp vegetable oil

  • 1 tsp minced garlic

  • ½ tsp grated ginger (optional)

  • Sesame seeds (for garnish)


Instructions

1. Marinate the Beef

In a bowl, combine sliced beef with soy sauce, cornstarch, sesame oil, sugar, and black pepper.
Mix well and let marinate for 15 minutes.
This keeps the beef tender and juicy.


2. Cook the Noodles

Boil noodles according to package instructions until just al dente.
Drain and rinse briefly with cold water to stop cooking.
Toss lightly with a few drops of oil to prevent sticking.


3. Prepare the Sauce

In a small bowl, mix soy sauce, oyster sauce, dark soy sauce, sugar, sesame oil, and water.
Set aside.


4. Stir-Fry the Beef

Heat 1 tbsp oil in a wok or large pan over high heat.
Add beef in a single layer and sear quickly (about 1–2 minutes per side).
Remove beef and set aside.


5. Stir-Fry the Vegetables

Add remaining oil to the same pan.
Add garlic and ginger, stir for 10 seconds until fragrant.
Add onions, carrots, and green vegetables.
Stir-fry for 2–3 minutes until slightly tender but still crisp.


6. Combine Everything

Add noodles to the pan, followed by the prepared sauce.
Toss well so noodles are evenly coated.
Return beef to the pan, add bean sprouts and green onions.
Stir-fry for another 2 minutes until everything is heated through.


7. Finish & Serve

Taste and adjust seasoning if needed.
Turn off heat, sprinkle with sesame seeds.
Serve hot.
