Bacon-Wrapped Stuffed Pork Loin with Cranberries & Herbs

Ingredients

Pork & Wrap

  • 1 pork loin (about 900 g – 1 kg), butterflied

  • 8–10 slices bacon

  • Salt and black pepper, to taste

  • 1 tbsp olive oil

Stuffing

  • 1 tbsp butter

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • ½ cup dried cranberries

  • ½ cup breadcrumbs (panko or fresh)

  • ¼ cup chopped walnuts or pecans

  • 2 tbsp fresh parsley, chopped

  • 1 tsp fresh thyme (or ½ tsp dried)

  • 2 tbsp cream cheese or soft goat cheese

  • Salt and pepper, to taste

Glaze (Optional but recommended)

  • 2 tbsp honey or maple syrup

  • 1 tbsp Dijon mustard

  • 1 tbsp cranberry juice or chicken stock


Instructions

1. Prepare the Stuffing

  1. Heat butter in a pan over medium heat.

  2. Add onion and sauté for 3–4 minutes until soft.

  3. Add garlic and cook for 30 seconds until fragrant.

  4. Stir in cranberries, breadcrumbs, nuts, parsley, thyme, salt, and pepper.

  5. Remove from heat and mix in the cream cheese.

  6. Let cool slightly.

2. Prepare the Pork

  1. Lay the butterflied pork loin flat on a cutting board.

  2. Season both sides generously with salt and black pepper.

  3. Spread the stuffing evenly over the pork, leaving a 2 cm border.

  4. Roll the pork tightly into a log and secure with kitchen twine.

3. Wrap with Bacon

  1. Lay bacon slices slightly overlapping on a board.

  2. Place the pork roll on top and wrap bacon around it.

  3. Tuck ends underneath or secure with toothpicks if needed.

4. Sear

  1. Preheat oven to 190°C (375°F).

  2. Heat olive oil in an oven-safe skillet over medium-high heat.

  3. Sear the pork roll on all sides until the bacon is golden (about 2–3 minutes per side).

5. Roast

  1. Mix glaze ingredients and brush over the pork.

  2. Transfer skillet to the oven.

  3. Roast for 30–40 minutes, basting once or twice, until internal temperature reaches 63°C (145°F).

6. Rest & Serve

  1. Remove from oven and rest for 10 minutes.

  2. Slice into thick rounds.

  3. Spoon pan juices over the top and garnish with fresh herbs and cranberries.
