Grilled Herb Chicken Skewers (Mediterranean Style)

Description

Juicy, tender chicken pieces marinated in lemon, garlic, yogurt, and Mediterranean herbs, then grilled until lightly charred. Served with fresh herbs, lemon wedges, and a simple tomato garnish. This dish is aromatic, smoky, and perfectly balanced between savory and fresh.


Ingredients (Serves 3–4)

For the Chicken Marinade

  • 700 g (1.5 lb) boneless, skinless chicken thighs or breasts

  • 3 tbsp Greek yogurt

  • 3 tbsp olive oil

  • Juice of 1 large lemon

  • 3 cloves garlic, finely minced

  • 1½ tsp paprika

  • 1 tsp dried oregano

  • 1 tsp ground cumin

  • ½ tsp turmeric (optional, for color)

  • ½ tsp black pepper

  • 1 tsp salt

  • 2 tbsp fresh parsley, finely chopped

For Grilling & Serving

  • Wooden or metal skewers

  • Extra olive oil for brushing

  • Fresh parsley or cilantro, chopped

  • Lemon wedges

  • Chopped fresh tomatoes (optional side)


Instructions

1. Prepare the Chicken

Cut the chicken into evenly sized cubes (about 3–4 cm / 1.5 inches). Uniform size ensures even cooking and juiciness.

2. Make the Marinade

In a large bowl, combine Greek yogurt, olive oil, lemon juice, garlic, paprika, oregano, cumin, turmeric, salt, and black pepper. Mix until smooth and fragrant.

3. Marinate

Add the chicken pieces to the marinade. Toss thoroughly so every piece is well coated.
Cover and refrigerate for at least 1 hour, ideally 4–8 hours for maximum flavor and tenderness.

4. Skewer the Chicken

Thread the marinated chicken onto skewers, leaving a little space between pieces to allow heat circulation.

5. Grill

  • Preheat a grill pan or outdoor grill to medium-high heat.

  • Lightly oil the grill.

  • Grill the skewers for 10–12 minutes, turning every 2–3 minutes, until golden brown with light char marks and fully cooked inside (internal temperature ~75°C / 165°F).

6. Rest and Garnish

Remove from heat and let rest for 2–3 minutes. Sprinkle with fresh parsley and drizzle lightly with olive oil.

  • Pair with flatbread, rice, or a fresh cucumber–tomato salad
