a special occasion.
Ingredients
-
4 boneless, skinless chicken breasts
-
2 tablespoons olive oil
-
1 cup sun-dried tomatoes (packed in oil), drained and chopped
-
2 cups fresh spinach, chopped
-
3 cloves garlic, minced
-
1 cup heavy cream
-
1/2 cup chicken broth
-
1 teaspoon Italian seasoning
-
1 teaspoon salt
-
1/2 teaspoon black pepper
-
1 cup grated Parmesan cheese
-
1/2 cup shredded mozzarella cheese
-
Fresh basil, chopped (for garnish)
Instructions
1. Preheat the oven
Preheat your oven to 375°F (190°C). Lightly grease a baking dish and set aside.
2. Sear the chicken
Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and black pepper. Sear them for 3–4 minutes per
side until lightly golden. Transfer the chicken to the prepared baking dish.
3. Prepare the sauce
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and chicken broth, then stir in the
Italian seasoning. Simmer for 3–4 minutes until slightly thickened.
4. Add vegetables and cheese
Stir in the sun-dried tomatoes and spinach, allowing the spinach to wilt. Add the Parmesan cheese and stir until melted and smooth.
5. Assemble the bake
Pour the creamy sauce evenly over the chicken breasts in the baking dish. Sprinkle the mozzarella cheese over the top.
6. Bake
Place the dish in the oven and bake uncovered for 25–30 minutes, or until the chicken is cooked through and the sauce is bubbly and golden.
7. Garnish and serve
Remove from the oven and let rest for a few minutes. Garnish with freshly chopped basil before serving.
