Ingredients You’ll Need

  • 1 cup pitted dates (Medjool dates work best; soak in warm water for 10 minutes if dry)
  • 1/2 cup nuts (almonds, walnuts, pecans, or cashews)
  • 2 tbsp unsweetened cocoa powder (or cacao powder for extra antioxidants)
  • 1/4 cup nut butter (almond butter, peanut butter, or sunflower seed butter)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional Mix-Ins :
    • 2 tbsp chia seeds, flaxseeds, or hemp seeds
    • 2 tbsp shredded coconut
    • 2 tbsp dark chocolate chips

For Rolling (Optional):

  • Unsweetened shredded coconut
  • Crushed nuts
  • Cocoa powder

Step-by-Step Instructions

Step 1: Blend the Ingredients

  1. In a food processor, combine the pitted dates, nuts, cocoa powder, nut butter, vanilla extract, and pinch of salt.
  2. Blend until the mixture forms a sticky dough. If the mixture is too dry, add 1–2 teaspoons of water or nut milk to help it come together.

Step 2: Add Optional Mix-Ins

  1. If using seeds, shredded coconut, or chocolate chips, pulse them into the mixture briefly to distribute evenly.

Step 3: Shape the Bites

  1. Scoop out about 1 tablespoon of the mixture at a time and roll it into small balls between your palms.
  2. If desired, roll the balls in shredded coconut, crushed nuts, or cocoa powder for added texture and flavor.

Step 4: Chill

  1. Place the energy bites on a plate or tray and refrigerate for 10–15 minutes to firm up.

Step 5: Serve

  1. Enjoy immediately or store in an airtight container in the fridge for up to 1 week.
