
Strawberry, Pistachio & Shortbread Tartare

A refreshing and crunchy dessert that’s as elegant as it is easy to make. Perfect for a sweet ending to your meal or a charming treat to share with guests.
π Ingredients:
For the Tartare:

400 g fresh strawberries, hulled and finely diced
-
2 tablespoons sugar
-
Juice of 1 lemon
-
50 g shelled pistachios, roughly chopped
For the Shortbread Cookies:
-
100 g butter, softened
-
100 g sugar
-
1 egg
-
200 g flour
-
½ packet baking powder (approx. 6 g)
-
1 pinch of salt
π©π³ Instructions:
1. Prepare the Shortbread Cookies:
-
Preheat the oven to 180°C (350°F).

In a mixing bowl, cream the softened butter with the sugar until light and fluffy.

Add the egg and mix well.
-
Sift in the flour, baking powder, and salt. Mix until a smooth dough forms.
-
Roll out the dough on a floured surface to about ½ cm thickness.
-
Cut out cookies using your preferred shapes.
-
Place on a baking tray lined with parchment paper and bake for 10–12 minutes or until lightly golden.

Let cool completely.
2. Prepare the Strawberry Tartare:

In a bowl, mix the diced strawberries with sugar and lemon juice.

Let marinate in the fridge for 15–20 minutes to allow the flavors to blend.
3. Assemble the Dessert:

On each plate or in small dessert glasses, spoon a generous layer of the strawberry tartare.

Sprinkle with chopped pistachios for crunch and flavor.
-
Crumble a few shortbread cookies over the top or serve whole cookies on the side for dipping.

Add a dollop of whipped cream or a scoop of vanilla ice cream on top for extra indulgence.

Use mint leaves for garnish and a touch of freshness.

For a refined presentation, use a ring mold to shape the tartare neatly.
