1 cup coarsely chopped pecans

1 cup unsalted butter

1 cup granulated sugar

½ tsp kosher salt

1 tsp vanilla extract

1 cup milk chocolate chips

Prepare Your Pan
Spray a 9-inch square baking dish with non-stick spray and line with parchment paper for easy removal. Evenly spread chopped pecans across the bottom. -
Cook the Toffee
In a heavy-bottomed 3-quart saucepan, combine butter, sugar, and salt. Cook over medium-low heat, stirring frequently until the sugar is fully dissolved. -
Boil to Perfection
Increase the heat slightly and continue cooking, stirring occasionally. Once the mixture reaches 290°F to 300°F (the "hard crack" stage), immediately remove it from heat. Stir in the vanilla extract. -
Pour and Set
Carefully pour the hot toffee mixture over the pecans. Let it sit undisturbed for a few minutes to begin setting. -
Melt the Chocolate
Sprinkle chocolate chips evenly over the hot toffee. Cover the pan with foil and allow it to sit for 5 minutes. Then, remove the foil and spread the melted chocolate evenly using an offset spatula. -
Cool and Break
Refrigerate the toffee for at least 2 hours or until completely set. Once firm, lift the toffee from the pan using the parchment paper and break into pieces. -
Store Properly
Store in an airtight container in a cool, dry place for up to 2 weeks. Avoid heat and humidity to prevent stickiness.
