🌊 Ingredients:
- 1 kg (2.2 lbs) fresh shrimp, peeled and deveined
- 15 limes, juiced
- 2 ripe mangoes, peeled and chopped
- 2 habanero peppers, roasted and deseeded
- 1 jalapeño pepper, roasted and deseeded
- 1/4 red onion, julienned
- A handful of fresh cilantro
- 4 teaspoons olive oil
- 1 teaspoon vegetable seasoning
- Salt and black pepper, to taste
🔪 Instructions:
Step 1: Prepare the Shrimp
- Butterfly the shrimp (cut them in half lengthwise) for better absorption of the marinade.
- Place the shrimp in a bowl and cover with lime juice.
- Let them marinate for 15-20 minutes until they turn opaque (this means they are "cooked" in the citrus).
Step 2: Make the Mango Habanero Sauce
- In a blender, combine:
- Chopped mango
- Roasted habanero and jalapeño peppers
- Cilantro
- Olive oil
- Vegetable seasoning
- A pinch of salt and pepper
- A splash of lime juice (to enhance acidity)
- Blend until smooth and creamy. Adjust seasoning if needed.
Step 3: Assemble the Aguachile
- Drain some of the lime juice from the shrimp (but leave a little for flavor).
- Add the julienned red onion and mix well.
- Pour the mango habanero sauce over the shrimp and gently toss.
- Let it sit for 5 more minutes to absorb the flavors.
