Ingredients

2 large eggs

1 cup fresh microgreens (or arugula)

2 slices Swiss cheese (optional)

For the Honey Mustard Spread

2 tbsp mayonnaise

1 tsp Dijon mustard
-
1 tsp honey
-
½ tsp lemon juice

Pinch of black pepper
Optional Sauce

Hot sauce

Instructions

Step 1 – Prepare the Spread

In a small bowl, combine:

Dijon mustard

Honey

Lemon juice

Black pepper
