1 cup (240 ml) heavy cream

½ cup (120 ml) chicken broth

½ cup (50 g) freshly grated Parmesan cheese

1 tsp Dijon mustard

½ tsp dried thyme

Salt and black pepper to taste

1 tbsp chopped fresh parsley
Mashed Potatoes

2 lbs (900 g) Yukon Gold potatoes, peeled and cubed

4 tbsp butter

½ cup (120 ml) warm whole milk

¼ cup (60 ml) heavy cream

Salt and pepper to taste
Green Peas

2 cups frozen peas
-
1 tbsp butter

Salt and black pepper
Instructions
Step 1 – Prepare the Potatoes

Place potatoes in a large pot and cover with cold salted water.

Bring to a boil and cook for 15–18 minutes until fork-tender.

Drain well.

Mash with butter, warm milk, and cream.

Season with salt and pepper.

Step 2 – Cook the Chicken

Pat the chicken dry.
