¼ tsp salt

1–2 tbsp ice water
For the Apple Filling

2 medium Honeycrisp or Granny Smith apples, peeled and diced

2 tbsp unsalted butter
-
¼ cup (50 g) brown sugar
-
1 tsp ground cinnamon
-
¼ tsp nutmeg
-
1 tsp lemon juice
-
1 tsp cornstarch (optional, for thicker filling)
Salted Caramel Sauce

½ cup (100 g) granulated sugar
-
3 tbsp unsalted butter
-
¼ cup (60 ml) heavy cream
-
½ tsp sea salt
-
½ tsp vanilla extract
Garnish
-
Powdered sugar
-
Flaky sea salt (optional)

Chopped toasted pecans (optional)
Instructions
Step 1 – Make the Tart Dough

Combine the flour, powdered sugar, and salt in a food processor.

Add the cold butter and pulse until crumbly.

Add the egg yolk and vanilla.

Drizzle in the ice water until the dough just comes together.

Shape into a disk, wrap, and refrigerate for 30 minutes.
Step 2 – Bake the Tart Shells

Preheat the oven to 350°F (175°C).

Roll the dough to about ⅛-inch (3 mm) thick.

Press into 8 mini tart pans.

Prick the bottoms with a fork.

Line with parchment paper and pie weights.
