Ingredients

For the Burger Patties

  • 1 lb (450 g) ground beef (80/20 blend)

  • 1 tsp Worcestershire sauce

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp smoked paprika

  • Salt and freshly ground black pepper

  • 1 tbsp olive oil

For the Caramelized Onions

  • 2 medium yellow onions, thinly sliced

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1 tsp brown sugar

  • 1 tsp balsamic vinegar

  • Pinch of salt

For the Garlic Aioli

  • ⅓ cup mayonnaise

  • 1 garlic clove, finely grated

  • 1 tsp Dijon mustard

  • 1 tsp lemon juice

  • ½ tsp honey

  • Salt and black pepper to taste

For Assembly

  • 2 brioche burger buns

  • 2 oz (60 g) blue cheese, crumbled

  • 2 slices white cheddar, Gruyère, or Havarti cheese

  • Butter for toasting buns

  • Fresh parsley or thyme for garnish (optional)

Instructions

Step 1 – Caramelize the Onions

  1. Heat butter and olive oil in a skillet over medium-low heat.

  2. Add the sliced onions and a pinch of salt.

  3. Cook slowly for 20–25 minutes, stirring occasionally.

  4. Stir in the brown sugar and balsamic vinegar during the final 5 minutes.

  5. Cook until the onions are deeply golden, soft, and jam-like.

  6. Remove from the heat and set aside.

Step 2 – Prepare the Garlic Aioli

  1. In a small bowl, whisk together:

    • Mayonnaise

    • Grated garlic

    • Dijon mustard

    • Lemon juice

    • Honey

    • Salt

    • Black pepper

  2. Refrigerate until ready to serve.

Step 3 – Make the Burger Patties

  1. In a bowl, gently combine the ground beef with Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper.

Step 5 – Toast the Buns

  1. Spread a thin layer of butter on the cut sides of the brioche buns.

  2. Toast in a skillet for 1–2 minutes, until golden brown and lightly crisp.

Step 6 – Assemble the Burgers

  1. Spread a generous layer of garlic aioli on the bottom bun.

  2. Place the cooked beef patty on top.

  3. Add the melted cheese.

  4. Spoon the caramelized onions over the patty.

  5. Sprinkle generously with crumbled blue cheese.

  6. Garnish with fresh parsley or thyme if desired.

  7. Finish with another light spread of garlic aioli on the top bun before closing the burger.
