For the Vanilla Cream Layer

¼ cup (50 g) granulated sugar

1 tsp vanilla extract

½ cup (120 ml) heavy whipping cream

2 tbsp powdered sugar
For the Cherry Filling

4 cups (600 g) fresh or frozen pitted cherries

½ cup (100 g) granulated sugar

2 tbsp cornstarch
-
2 tbsp water
-
1 tbsp lemon juice
-
1 tsp vanilla extract
-
¼ tsp almond extract (optional)

Pinch of salt
For the Whipped Cream Topping

1 cup (240 ml) heavy whipping cream
-
2 tbsp powdered sugar
-
1 tsp vanilla extract
For Garnish

Fresh whole cherries with stems
-
Powdered sugar
-
White chocolate shavings (optional)

Fresh mint leaves (optional)
Instructions

Step 1 – Prepare the Pie Crust

Preheat the oven to 375°F (190°C).

In a large bowl, combine the flour, sugar, and salt.

Cut in the cold butter until the mixture resembles coarse crumbs.

Add the ice water one tablespoon at a time until the dough comes together.
-
Shape into a disk, wrap, and chill for 30 minutes.

Roll the dough into a 12-inch (30 cm) circle and fit it into a 9-inch pie dish.

Trim and crimp the edges.

Prick the base with a fork, line with parchment paper, and fill with pie weights.

Blind bake for 20 minutes.

Remove the weights and bake for another 12–15 minutes, until golden brown.

Cool completely.
Step 2 – Make the Cherry Filling

In a saucepan, combine:

Cook over medium heat until the cherries begin to release their juices.

Mix the cornstarch with water to create a slurry.

Stir the slurry into the cherries and cook for 2–3 minutes, until thickened.

Step 3 – Prepare the Vanilla Cream Layer

Beat the softened cream cheese until smooth.

Add the granulated sugar and vanilla extract.

In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.

Fold the whipped cream gently into the cream cheese mixture until light and fluffy.
Step 4 – Assemble the Pie

Spread the vanilla cream evenly over the cooled pie crust.

Spoon the cooled cherry filling over the cream layer.

Refrigerate for 2 hours to allow the layers to set.
Step 5 – Make the Whipped Cream

Beat the heavy cream with powdered sugar and vanilla until stiff peaks form.

Pipe decorative swirls around the edge of the pie using a star tip.

Top each swirl with a fresh whole cherry.
Step 6 – Finish and Serve

Dust lightly with powdered sugar if desired.

Chill for another 1–2 hours before slicing.
