Tropical Frozen Treats: Delicious Ice Creams and Refreshing Desserts to Beat the Heat


1. Mango Ice Cream with Fresh Mango Chunks

Ingredients:

  • 2 ripe mangoes (peeled and diced)

  • 1 cup heavy cream

  • 1/2 cup condensed milk

  • 1/2 cup whole milk

  • 2 tbsp sugar (adjust depending on sweetness of mangoes)

  • 1 tsp vanilla extract

  • Extra diced mango for topping

Instructions:

  1. Blend mango flesh until smooth.

  2. In a bowl, whisk together heavy cream, condensed milk, whole milk, sugar, and vanilla.

  3. Fold in the mango purée until evenly combined.

  4. Pour into an ice cream maker and churn according to manufacturer's instructions.

  5. If no ice cream maker, pour into a container and freeze for 1 hour. Stir to break ice crystals, then freeze for 5-6 more hours.

  6. Serve topped with fresh mango chunks.


2. Vietnamese Avocado Coconut Ice Drink (Sinh Tố Bơ Dừa)

Ingredients:

  • 2 ripe avocados, diced

  • 1/2 cup coconut milk

  • 1/4 cup sweetened condensed milk

  • 2 tbsp sugar (optional)

  • Crushed ice

  • Roasted peanuts (optional topping)

Instructions:

  1. In a glass, layer diced avocado.

  2. Add coconut milk and condensed milk over the avocado.

  3. Top generously with crushed ice.

  4. Optionally sprinkle with roasted peanuts.

  5. Stir well before drinking!


3. Thai Coconut Ice Cream (served in coconut shell with toppings)

Ingredients:

  • 2 cups coconut milk

  • 1 cup coconut cream

  • 3/4 cup sugar

  • 1/4 tsp salt

  • Toppings: colorful jelly cubes, sticky rice, jackfruit, taro balls, coconut strips

Instructions:

  1. In a saucepan, combine coconut milk, cream, sugar, and salt. Heat gently, stirring until sugar dissolves.

  2. Cool completely, then churn in an ice cream maker.

  3. Without an ice cream maker: pour into a container, freeze 1 hour, stir, and repeat until creamy.

  4. Scoop ice cream into a coconut shell.

  5. Top with colorful jellies, taro balls, coconut strips, sticky rice, and jackfruit.


4. Stracciatella Gelato (Chocolate Chip Vanilla Ice Cream)

Ingredients:

  • 2 cups whole milk

  • 1 cup heavy cream

  • 3/4 cup sugar

  • 1 tsp vanilla extract

  • 3 oz dark chocolate, melted

Instructions:

  1. Heat milk and sugar until sugar dissolves. Cool, then stir in heavy cream and vanilla.

  2. Pour into an ice cream maker and churn.

  3. In the last minutes of churning, drizzle in melted chocolate to create fine chocolate streaks (stracciatella effect).

  4. Freeze for 1-2 hours before serving.
