🍝 Spicy Thai Seafood Spaghetti

🧾 Ingredients

Pasta

  • 250 g spaghetti

  • Water for boiling

  • 1 teaspoon salt

Seafood

  • 200 g shrimp (peeled & deveined)

  • 200 g squid (cleaned, sliced into rings)

  • Optional: mussels or scallops

Vegetables

  • ½ cup baby corn (halved)

  • ½ cup carrot (thinly sliced)

  • ½ red bell pepper (sliced)

  • ½ cup green beans or snap peas

  • 2 tablespoons green peppercorns (fresh or brined)

  • 1 handful fresh Thai basil leaves

Sauce

  • 2 tablespoons oyster sauce

  • 1 tablespoon fish sauce

  • 1 teaspoon light soy sauce

  • 1 teaspoon sugar

  • 1–2 teaspoons chili paste (or crushed fresh chilies)

  • 2 tablespoons water or seafood stock

Aromatics

  • 4 cloves garlic (minced)

  • 2 Thai red chilies (sliced)

  • 2 tablespoons cooking oil


👩‍🍳 Instructions

Step 1: Cook the Pasta

  1. Bring salted water to a boil.

  2. Cook spaghetti until al dente.

  3. Drain and set aside.
    👉 Reserve ¼ cup pasta water.


Step 2: Prepare the Sauce

In a small bowl, mix:

  • Oyster sauce

  • Fish sauce

  • Soy sauce

  • Sugar

  • Chili paste

  • Water/stock

Set aside.


Step 3: Stir-Fry the Seafood

  1. Heat oil in a wok over high heat.

  2. Add garlic and chilies, stir until fragrant.

  3. Add shrimp and squid.

  4. Stir-fry quickly (2–3 minutes) until just cooked.

  5. Remove and set aside (to avoid overcooking).


Step 4: Stir-Fry Vegetables

  1. In the same pan, add vegetables.

  2. Stir-fry 2–3 minutes until slightly tender but still crisp.


Step 5: Combine Everything

  1. Return seafood to the pan.

  2. Add cooked spaghetti.

  3. Pour in sauce.

  4. Toss everything over high heat.

  5. Add reserved pasta water if needed for moisture.


Step 6: Finish

  • Turn off heat.

  • Stir in fresh Thai basil leaves.

  • Toss until fragrant.
