200 g shrimp (peeled & deveined)

200 g squid (cleaned, sliced into rings)

½ cup baby corn (halved)
-
½ cup carrot (thinly sliced)
-
½ red bell pepper (sliced)
-
½ cup green beans or snap peas
-
2 tablespoons green peppercorns (fresh or brined)
-
1 handful fresh Thai basil leaves
Sauce
-
2 tablespoons oyster sauce
-
1 tablespoon fish sauce
-
1 teaspoon light soy sauce
-
1 teaspoon sugar
-
1–2 teaspoons chili paste (or crushed fresh chilies)

2 tablespoons water or seafood stock
Aromatics
-
4 cloves garlic (minced)
-
2 Thai red chilies (sliced)
-
2 tablespoons cooking oil

Step 1: Cook the Pasta

Bring salted water to a boil.

Cook spaghetti until al dente.

Drain and set aside.
👉 Reserve ¼ cup pasta water.
Step 2: Prepare the Sauce
In a small bowl, mix:

Oyster sauce
-
Fish sauce
-
Soy sauce
-
Sugar
-
Chili paste
-
Water/stock
Set aside.
Step 3: Stir-Fry the Seafood
-
Heat oil in a wok over high heat.

Add garlic and chilies, stir until fragrant.

Add shrimp and squid.
-
Stir-fry quickly (2–3 minutes) until just cooked.

Remove and set aside (to avoid overcooking).
Step 4: Stir-Fry Vegetables

In the same pan, add vegetables.

Stir-fry 2–3 minutes until slightly tender but still crisp.
Step 5: Combine Everything

Return seafood to the pan.

Add cooked spaghetti.
-
Pour in sauce.

Toss everything over high heat.

Add reserved pasta water if needed for moisture.
Step 6: Finish

Turn off heat.

Stir in fresh Thai basil leaves.

Toss until fragrant.
