Noodles

250 g sweet potato glass noodles (dangmyeon)
Beef Marinade

250 g beef (sirloin or ribeye, thinly sliced)

2 tablespoons soy sauce

1 tablespoon sugar

1 teaspoon sesame oil

1 teaspoon minced garlic
-
¼ teaspoon black pepper
Vegetables
-
1 cup carrot (julienned)
-
1 cup spinach (blanched)

½ onion (thinly sliced)
-
½ red bell pepper (sliced)
-
3 green onions (cut into 2-inch pieces)

1 cup mushrooms (shiitake or button, sliced)
Sauce
-
3 tablespoons soy sauce
-
1 tablespoon sugar
-
1 tablespoon sesame oil
-
1 teaspoon sesame seeds
-
2 tablespoons water
Cooking Oil

2 tablespoons vegetable oil

Step 1: Soak & Cook Noodles

Soak sweet potato noodles in warm water for 15–20 minutes.

Boil for 5–6 minutes until soft but chewy.

Drain and cut into shorter lengths if needed.

Toss with 1 teaspoon sesame oil to prevent sticking.
Step 2: Marinate Beef

Mix beef with soy sauce, sugar, sesame oil, garlic, and pepper.

Let marinate for 10–15 minutes.
Step 3: Cook Vegetables (Separately for Best Texture)

Heat a little oil in a pan.

Stir-fry each vegetable briefly:

Carrots (1–2 minutes)

Onion

Mushrooms
-
Bell pepper

Spinach (just until wilted)

Set aside.
Step 4: Cook Beef

In the same pan, stir-fry marinated beef over medium-high heat until cooked and slightly caramelized.
Step 5: Combine Everything

In a large pan or wok, add noodles.

Add cooked vegetables and beef.

Pour in sauce (soy sauce, sugar, sesame oil, water).

Toss everything together over medium heat for 2–3 minutes.
Step 6: Finish

Sprinkle sesame seeds.

Garnish with sliced green onions.

Adjust seasoning if needed.
