150g halloumi cheese, sliced

½ tsp chili flakes (optional)

½ tsp black pepper
½ lemon, juiced

1 tbsp fresh mint or basil, chopped

1 tbsp honey (optional)

Instructions:
Toast the Bread: Lightly toast the bread slices until golden brown.
Cook the Halloumi: Heat olive oil in a pan over medium heat, then fry halloumi slices for about 1-2 minutes per side until golden and crispy.
Prepare the Avocado Spread: Mash avocado with lemon juice, black pepper, and chili flakes.
Assemble the Toast: Spread the avocado mixture over each slice of toast, top with crispy halloumi, and drizzle with honey if desired.
Garnish & Serve: Sprinkle with fresh herbs and serve immediately!
Notes & Variations:
Add poached eggs for extra protein.
Swap halloumi for feta for a different cheesy twist.
