Chocolate Raspberry Truffle Cake

Cake:
๐Ÿซ 1 1/2 cups all-purpose flour
๐Ÿฅ„ 1/2 cup cocoa powder
๐Ÿง‚ 1 tsp baking soda
๐Ÿฅ„ 1/2 tsp salt
๐Ÿงˆ 1/2 cup unsalted butter, softened
๐Ÿฅ„ 1 cup sugar
๐Ÿฅš 2 eggs
๐Ÿฅ› 1 cup buttermilk
๐ŸŒฐ 1 tsp vanilla extract

Raspberry Filling:
โค๏ธ 1 1/2 cups fresh raspberries
๐Ÿฅ„ 1/4 cup sugar
๐Ÿ‹ 1 tbsp lemon juice

Chocolate Truffle Ganache:
๐Ÿซ 1 1/2 cups dark chocolate chips
๐Ÿฅ› 3/4 cup heavy cream
๐Ÿงˆ 2 tbsp butter

Instructions:
1๏ธโƒฃ Preheat oven to 350°F (175°C). Grease and line three 7-inch cake pans.
2๏ธโƒฃ Mix flour, cocoa, baking soda, and salt. In another bowl, beat butter and sugar, then add eggs, buttermilk, and vanilla. Combine wet and dry ingredients.
3๏ธโƒฃ Divide batter into pans and bake for 30-35 minutes. Cool completely.
4๏ธโƒฃ Simmer raspberries, sugar, and lemon juice until thickened. Let cool.
5๏ธโƒฃ Heat heavy cream, pour over chocolate chips, stir until smooth, then mix in butter.
6๏ธโƒฃ Spread raspberry filling between cake layers, then pour ganache over the cake.
7๏ธโƒฃ Chill before serving for a rich, truffle-like texture.
