Sweet and Tangy Pineapple Beef Bake

Ingredients

  • 1½ lb (680 g) beef sirloin or chuck, cut into bite-sized pieces

  • 1 tablespoon vegetable oil

  • 1 medium onion, sliced

  • 2 cloves garlic, minced

  • 1 bell pepper (red or green), sliced

  • 1 can (14 oz / 400 g) pineapple chunks, drained (reserve juice)

  • ½ cup pineapple juice (from the can)

  • ¼ cup soy sauce

  • 3 tablespoons ketchup

  • 2 tablespoons brown sugar

  • 1 tablespoon rice vinegar or apple cider vinegar

  • 1 tablespoon cornstarch

  • 2 tablespoons water

  • Salt and black pepper, to taste

  • Optional garnish: green onions or sesame seeds

Instructions

1.  Preheat the Oven

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

2.  Brown the Bee

Heat vegetable oil in a large skillet over medium-high heat.

Add beef pieces, season lightly with salt and pepper, and sear until browned on all sides. Transfer beef to the prepared baking dish.

3.  Sauté the Vegetables

In the same skillet, add onion and bell pepper. Cook for 3–4 minutes until slightly softened.

Add garlic and cook for another 30 seconds until fragrant.

4.  Make the Sweet and Tangy Sauce

In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, and vinegar.

Pour the sauce into the skillet and bring to a gentle simmer.

5.  Thicken the Sauce

Mix cornstarch with water until smooth. Stir into the sauce and cook for 1–2 minutes until slightly thickened.

6.  Assemble the Bake

Add pineapple chunks and sautéed vegetables over the beef in the baking dish.

Pour the thickened sauce evenly on top and gently stir to coat everything.

7.  Bake

Cover with foil and bake for 30 minutes.

Remove foil and bake uncovered for another 10–15 minutes, until the beef is tender and the sauce is bubbly.

8.  Serve

Garnish with green onions or sesame seeds if desired.

Serve hot over steamed rice, jasmine rice, or alongside noodles.

Tips

  • For extra depth, add 1 teaspoon grated ginger to the sauce.

  • Substitute beef with chicken or pork for variation.

  • If you like heat, add chili flakes or sliced fresh chili.
