Ingredients
Salmon Bites

600 g (1.3 lb) salmon fillet, skin removed, cut into cubes

Salt and black pepper to taste

1 tbsp olive oil

3 tbsp butter

4 cloves garlic, minced

1 tsp paprika

½ tsp chili flakes (optional)

1 tbsp lemon juice

1 tbsp chopped parsley
Creamy Herb Sauce
-
120 ml (½ cup) mayonnaise
-
60 ml (¼ cup) sour cream or Greek yogurt
-
1 tbsp lemon juice
-
1 tbsp Dijon mustard
-
1 tbsp chopped parsley
-
1 tsp chopped dill
-
1 small garlic clove, minced

Salt and pepper to taste
Instructions

1. Season the salmon
Pat salmon cubes dry and season with salt, pepper, paprika, and chili flakes.
2. Cook salmon bites

Heat olive oil in a large skillet over medium-high heat.

Add salmon cubes in a single layer.

Sear 2–3 minutes per side until golden and cooked through.

Reduce heat, add butter and garlic.

Toss salmon in garlic butter for 1–2 minutes.

Finish with lemon juice and parsley.
3. Make the creamy herb sauce
In a bowl, whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, garlic, parsley, dill, salt and pepper.
4. Serve
Arrange salmon bites around a bowl of sauce and drizzle with extra garlic butter.

Do not overcook salmon; it cooks very fast.
