Creamy Spinach Pasta with Pan-Seared Salmon 🍝🐟

Ingredients

Salmon

  • 2 salmon fillets (180–200 g / 6–7 oz each)

  • Salt and black pepper

  • 1 tbsp olive oil

  • 1 tbsp butter

  • ½ tsp chili flakes (optional)

  • 1 tsp lemon juice

Pasta & Cream Sauce

  • 200 g (7 oz) rigatoni or penne pasta

  • 1 tbsp butter

  • 3 cloves garlic, minced

  • 120 ml (½ cup) chicken broth

  • 180 ml (¾ cup) heavy cream

  • 50 g (½ cup) grated Parmesan cheese

  • 2 cups fresh spinach

  • Salt and pepper to taste

  • ½ tsp Italian seasoning


Instructions

1. Cook pasta

  1. Bring salted water to a boil.

  2. Cook pasta until al dente.

  3. Reserve ½ cup pasta water, then drain.


2. Cook the salmon

  1. Season salmon with salt, pepper, and chili flakes.

  2. Heat olive oil in skillet over medium-high heat.

  3. Sear salmon 4–5 minutes per side until golden and cooked through.

  4. Add butter and lemon juice; baste for 1 minute.

  5. Remove and set aside.


3. Make creamy spinach sauce

  1. In the same pan, melt butter and sauté garlic for 30 seconds.

  2. Add chicken broth and simmer 2 minutes.

  3. Pour in heavy cream and bring to gentle simmer.

  4. Stir in Parmesan cheese until melted.

  5. Add spinach and cook until wilted.

  6. Season with salt, pepper, and Italian seasoning.


4. Combine pasta

Add cooked pasta to the sauce and toss.
If needed, add pasta water to loosen sauce.


5. Serve

Plate creamy pasta and top with pan-seared salmon.


Tips

  • Do not overcook salmon to keep it juicy.

  • Add sun-dried tomatoes for extra flavor.
