
Caribbean-Inspired Surf & Turf Yellow Rice Bowl

Ingredients
For the Yellow Rice

1½ cups long-grain rice

3 cups chicken or vegetable broth

1 teaspoon turmeric or ground annatto

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

Salt, to taste
For the Steak (Turf)

10 oz (280 g) sirloin or flank steak

1 tablespoon olive oil
-
1 teaspoon paprika
-
½ teaspoon ground cumin
-
½ teaspoon garlic powder
-
Salt and black pepper, to taste
For the Shrimp (Surf)

12–16 large shrimp, peeled and deveined
-
1 tablespoon olive oil
-
2 cloves garlic, minced
-
½ teaspoon chili powder or cayenne (optional)
-
Juice of ½ lime
-
Salt and pepper, to taste
Bowl Toppings (Optional but Recommended)

Grilled pineapple chunks
-
Black beans or red beans
-
Sliced avocado
-
Diced bell peppers
-
Fresh cilantro or parsley
-
Lime wedges
Instructions
1. Cook the Yellow Rice
Heat olive oil in a saucepan over medium heat.
Sauté onion until soft, about 3–4 minutes. Add garlic and cook for 30 seconds.
Stir in rice and turmeric (or annatto), coating the grains evenly.
Pour in broth, season lightly with salt, bring to a boil, then cover and simmer for 15–18 minutes until rice is fluffy and golden. Set aside.
2. Prepare the Steak
Pat the steak dry and season with paprika, cumin, garlic powder, salt, and pepper.
Heat olive oil in a skillet or grill pan over high heat.
Cook steak for 3–4 minutes per side (medium-rare to medium).
Rest for 5 minutes, then slice thinly against the grain.
3. Cook the Shrimp
Heat olive oil in a skillet over medium-high heat.
Add garlic and cook briefly until fragrant.
Add shrimp, season with chili powder, salt, and pepper.
Cook 1–2 minutes per side until pink and opaque.
Finish with lime juice and remove from heat.
4. Assemble the Bowl
Divide yellow rice between serving bowls.
Top with sliced steak and shrimp.
Add grilled pineapple, beans, avocado, and vegetables as desired.
Garnish with fresh herbs and serve with lime wedges.
