Ingredients

For the Tuna

  • 1 lb (450 g) sushi-grade ahi tuna loin

  • 2 tbsp black sesame seeds

  • 2 tbsp white sesame seeds

  • 1 tbsp vegetable oil

  • Salt and freshly ground black pepper

For the Ponzu Sauce

  • 3 tbsp soy sauce

  • 2 tbsp fresh lemon juice

  • 1 tbsp rice vinegar

  • 1 tbsp mirin

  • 1 tsp sesame oil

  • 1 tsp grated fresh ginger

  • 1 tsp honey (optional)

Garnish

  • Microgreens

  • Sesame seeds

  • Thinly sliced scallions

  • Pickled ginger (optional)

Instructions

Step 1: Prepare the Sauce

In a small bowl, whisk together the soy sauce, lemon juice, rice vinegar, mirin, sesame oil, ginger, and honey.

Refrigerate until ready to serve.

Step 2: Coat the Tuna

Pat the tuna dry with paper towels.

Season lightly with salt and black pepper.

Mix the black and white sesame seeds on a plate, then press the tuna evenly into the seeds until all sides are coated.

Step 3: Sear the Tuna

Heat the vegetable oil in a heavy skillet over high heat.

Sear the tuna for 30–45 seconds per side, leaving the center rare.

Immediately transfer to a cutting board and let rest for 5 minutes.

Step 4: Slice

Using a very sharp knife, slice the tuna into ¼-inch (6 mm) thick pieces.

Arrange over a pool of ponzu sauce.

Garnish with microgreens, sesame seeds, and sliced scallions.
