Berry Panna Cotta
Ingredients
For the Panna Cotta

2 cups (480 ml) heavy cream

1 cup (240 ml) whole milk
-
⅓ cup (70 g) granulated sugar
-
2 tsp vanilla extract
-
2½ tsp powdered gelatin
-
3 tbsp cold water
For the Berry Sauce
-
1½ cups (200 g) mixed berries (raspberries, blackberries, blueberries, or currants)
-
3 tbsp sugar
-
1 tbsp lemon juice
-
2 tbsp water
Garnish
-
Fresh raspberries
-
Blackberries
-
Red currants
-
Mint leaves
-
Powdered sugar (optional)
Instructions
Step 1: Bloom the Gelatin
Sprinkle the gelatin over the cold water and let it stand for 5–10 minutes until fully bloomed.
Step 2: Make the Panna Cotta
In a saucepan, combine the heavy cream, milk, and sugar.
Heat over medium-low heat until the sugar dissolves and the mixture is steaming, but do not let it boil.
Remove from the heat and stir in the vanilla extract and bloomed gelatin until completely dissolved.
Step 3: Chill
Pour the mixture evenly into serving glasses.
Refrigerate for 4–6 hours, or until completely set.
Step 4: Prepare the Berry Sauce
In a small saucepan, combine the berries, sugar, lemon juice, and water.
Cook for 5–8 minutes until the berries soften.
Blend until smooth if desired, then strain through a fine sieve for a silky sauce.
Allow the sauce to cool completely.
Step 5: Assemble
Pour the cooled berry sauce over the chilled panna cotta.
Top with fresh berries, mint leaves, and a light dusting of powdered sugar.
Tips

Do not boil the cream mixture, or the texture may become grainy.

Chill the berry sauce completely before pouring it over the panna cotta.

For extra flavor, add a little lemon zest or vanilla bean seeds.

The dessert can be prepared up to 2 days in advance.
