Ingredients

Pastry

  • 1 sheet frozen puff pastry, thawed

  • 1 egg, beaten (for egg wash)

Filling

  • 1 cup (250 g) whole milk ricotta cheese

  • 2 tbsp honey, plus extra for drizzling

  • 1 tsp fresh thyme leaves

  • ½ tsp lemon zest

  • Pinch of sea salt

  • Freshly ground black pepper

Garnish

  • Fresh thyme sprigs

  • Extra honey

  • Flaky sea salt (optional)

Instructions

Step 1: Prepare the Pastry

Preheat the oven to 400°F (200°C).

Line a baking tray with parchment paper.

Cut the puff pastry into 3½-inch (9 cm) circles or squares.

Using a smaller cutter or the back of a glass, lightly score a circle in the center without cutting all the way through.

Brush with beaten egg.

Bake for 15–18 minutes, until puffed and deeply golden.

If needed, gently press the center down with the back of a spoon while still warm.

Step 2: Make the Ricotta Filling

In a bowl, combine:

  • Ricotta cheese

  • Honey

  • Lemon zest

  • Fresh thyme

  • Pinch of salt

  • Black pepper

Mix until smooth and creamy.

Step 3: Assemble

Spoon the ricotta mixture into each pastry shell.

Drizzle generously with warm honey.

Top with fresh thyme leaves.

Finish with a pinch of flaky sea salt if desired.
