Ingredients

For the Lobster Tails

  • 4 lobster tails (6–8 oz / 170–225 g each)

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 1 tsp kosher salt

  • ½ tsp freshly ground black pepper

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp cayenne pepper (optional)

  • 1 tsp lemon zest

For the Creamy Garlic Parmesan Sauce

  • 2 tbsp unsalted butter

  • 5 garlic cloves, minced

  • 1 small shallot, finely diced

  • 1 cup (240 ml) heavy cream

  • ½ cup (120 ml) seafood or chicken stock

  • ½ cup freshly grated Parmesan cheese

  • 1 tsp Dijon mustard

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • 1 tbsp fresh lemon juice

  • Salt and freshly ground black pepper, to taste

For Garnish

  • 2 tbsp chopped fresh parsley

  • Extra grated Parmesan

  • Lemon wedges

  • Fresh cracked black pepper

Instructions

Step 1 – Prepare the Lobster Tails

  1. Using kitchen shears, cut through the top shell lengthwise.

  2. Gently loosen the meat from the shell while leaving the tail attached.

  3. Lift the meat and rest it on top of the shell.

  4. Pat dry with paper towels.

  5. Season with:

    • Salt

    • Pepper

    • Smoked paprika

    • Garlic powder

    • Onion powder

    • Cayenne (if using)

    • Lemon zest

Step 2 – Sear the Lobster

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Place lobster tails meat-side down.

  3. Cook for 2–3 minutes until lightly golden.

  4. Flip the tails.

  5. Add butter and continuously baste for another 3–4 minutes, until the lobster reaches an internal temperature of 140°F (60°C).

  2. Arrange the lobster tails on top.

  3. Sprinkle with chopped parsley.
