Ingredients

  • 3 lbs (1.4 kg) beef short ribs

  • 2 tbsp olive oil

  • 2 tsp kosher salt

  • 1 tsp onion powder

For the Braising Sauce

  • 1 large onion, diced

  • 4 cloves garlic, minced

  • 1 cup beef broth

  • 1 cup BBQ sauce

  • 2 tbsp Worcestershire sauce

  • 2 tbsp tomato paste

  • 2 tbsp brown sugar

  • 1 tbsp Dijon mustard

  • 2 tsp apple cider vinegar

  • 1 tsp smoked paprika

  • ½ tsp cayenne pepper (optional)

  • 2 sprigs fresh thyme

  • 1 bay leaf

For Garnish

  • Fresh chopped parsley

  • Freshly cracked black pepper

Step 1 – Prepare the Ribs

  1. Pat the short ribs dry with paper towels.

  2. Season all sides with:

    • Salt

    • Black pepper

    • Smoked paprika

    • Garlic powder

    • Onion powder

Step 2 – Sear

  1. Heat olive oil in a Dutch oven over medium-high heat.

  2. Sear the ribs for 2–3 minutes per side until deeply browned.

  3. Transfer to a plate.

Step 3 – Build the Sauce

In the same pot:

  1. Cook onion for about 5 minutes.

Step 5 – Finish

  1. Remove the ribs carefully.

  2. Simmer the sauce uncovered for 10–15 minutes until thick and glossy.

  3. Brush or spoon the reduced sauce generously over the ribs.
