Seafood

  • 200g shrimp, peeled & deveined

  • 200g calamari (squid rings)

  • 200g firm white fish (like cod or halibut), cubed

Vegetables

  • 1 cup cherry tomatoes, halved

  • ½ small red onion, thinly sliced

  • 2 tablespoons chopped parsley

  • 1 tablespoon chopped chives

  • Fresh rosemary sprig (optional garnish)

  • 3 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon lemon zest

  • 1 small garlic clove, minced

  • Salt & black pepper to taste

1️⃣ Cook Seafood

Bring a pot of salted water to a gentle boil.

  • Cook shrimp 2–3 minutes until pink.

  • Cook calamari 1–2 minutes only (overcooking makes it rubbery).

  • Poach fish cubes 3–4 minutes until just opaque.

Drain and let cool.


2️⃣ Assemble

In a large bowl, combine seafood, tomatoes, red onion, and herbs.


3️⃣ Dress

Whisk olive oil, lemon juice, zest, garlic, salt, and pepper.
Pour over salad and toss gently.
