Ingredients

2 medium zucchini, cut into thick half-moons

2 bell peppers (1 red, 1 yellow), cut into large chunks

1 small red onion, cut into wedges

3 tbsp extra virgin olive oil

3 garlic cloves, minced

1 tsp Italian seasoning

1 tsp dried oregano
-
½ tsp smoked paprika
-
½ tsp garlic powder
-
¼ tsp crushed red pepper flakes (optional)

Salt and freshly ground black pepper, to taste
For the Garlic Herb Finish

1 tbsp melted butter (optional)
-
1 tbsp fresh parsley, chopped
-
1 tsp fresh thyme leaves
-
1 tsp lemon zest
-
1 tbsp fresh lemon juice
Instructions

Step 1 – Preheat the Oven

Preheat the oven to 425°F (220°C).

Line a large baking sheet with parchment paper or lightly grease it with olive oil.
Step 2 – Season the Vegetables

In a large mixing bowl, combine:

Zucchini

Bell peppers

Red onion
