Creamy Egg-Free Mayonnaise 
Ingredients:
- ½ cup soy milk
- ½ cup avocado oil
- ½ teaspoon sugar
- ½ teaspoon salt
- ½ teaspoon Dijon mustard (optional)
- 1 tablespoon vinegar

Instructions:
1. Put soy milk, sugar, salt, Dijon mustard, and vinegar in a food processor or use a hand blender.

2. Slowly add the avocado oil while pulsing and blending until the mixture thickens and becomes creamy.

3. Transfer the mayonnaise to a jar or airtight container and store in the fridge for up to one week.
