Ingredients You’ll Need

For the Casserole:

  • 1 lb ground breakfast sausage (or turkey sausage for a lighter option)
  • 8 cups cubed bread (stale French bread, sourdough, or baguette works best)
  • 2 cups shredded cheddar cheese (or your favorite melting cheese)
  • 1 cup shredded mozzarella cheese (optional, for extra cheesiness)
  • 10 large eggs
  • 3 cups whole milk (or half-and-half for extra richness)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional but recommended)
  • 1/4 tsp red pepper flakes (optional, for a hint of heat)

Optional Toppings:

  • Green onions , chopped
  • Fresh parsley , chopped
  • Hot sauce , for serving

Step-by-Step Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C) . Grease a 9x13-inch baking dish or casserole dish with cooking spray or butter.

Step 2: Cook the Sausage

  1. In a skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain excess grease and set aside.

Step 3: Layer the Casserole

  1. Spread half of the cubed bread evenly across the bottom of the prepared baking dish.
  2. Sprinkle half of the cooked sausage over the bread, followed by half of the shredded cheeses.
  3. Repeat the layers with the remaining bread, sausage, and cheeses.

Step 4: Make the Egg Mixture

  1. In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and red pepper flakes (if using) until smooth.
  2. Slowly pour the egg mixture evenly over the layered ingredients in the baking dish. Gently press down on the layers with a spatula to ensure the bread absorbs the liquid.

Step 5: Bake

  1. Bake for 45–50 minutes , or until the top is golden brown, the edges are bubbly, and the center is set. A knife inserted into the center should come out clean.

Step 6: Rest and Serve

  1. Let the casserole rest for 5–10 minutes before slicing. Garnish with green onions, parsley, or hot sauce if desired. Serve warm and enjoy!
