Directions :
Prep the Filling: Sauté mushrooms and garlic in olive oil for 5 mins. Season with thyme, salt, and pepper. Let cool, then mix with mozzarella.
Stuff the Chicken: Slice a pocket into each chicken breast. Fill with mushroom-cheese mixture.
Sear and Cook: Heat a pan with a bit of oil. Sear chicken 3-4 mins per side until golden. Add broth, cover, and simmer 10 mins or until cooked through.
Garnish & Serve: Sprinkle with parsley and serve hot!
