Roasted Beets & Carrots with Creamy Burrata Salad

Ingredients

  • 2 medium beets, peeled and diced
  • 3 large carrots, peeled and sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens (such as arugula, spinach, or spring mix)
  • 8 oz burrata cheese (1 ball)
  • 1/4 cup walnuts, toasted
  • 2 tablespoons balsamic glaze

Instructions

Step 1: Prepare the Oven and Vegetables

  • Preheat your oven to 425°F (220°C).
  • Peel the beets and dice them into 1-inch cubes. Peel and slice the carrots into 1/4-inch thick rounds or diagonally for a more elegant presentation.

Step 2: Season and Roast the Vegetables

  • Place the diced beets and sliced carrots on a large baking sheet.
  • Drizzle with 2 tablespoons of olive oil, and season generously with salt and pepper. Toss the vegetables to ensure they are evenly coated with the oil and seasoning.
  • Spread the vegetables in an even layer to promote even roasting.
  • Roast in the preheated oven for 25-30 minutes, turning them halfway through to ensure they are tender and caramelized.

Step 3: Prepare the Mixed Greens and Burrata

  • While the vegetables roast, arrange 4 cups of mixed greens in a large serving bowl.
  • Tear the burrata cheese into large, rustic pieces and set aside. The creamy center of the burrata will blend into the salad when tossed, creating a luscious texture.

Step 4: Toast the Walnuts

  • In a small skillet over medium heat, toast 1/4 cup of walnuts for 3-5 minutes until they are golden and fragrant. Stir frequently to prevent burning. Set aside to cool.

Step 5: Assemble the Salad

  • Once the beets and carrots are roasted and slightly cooled (they should still be warm but not piping hot), add them to the bowl with the mixed greens.
  • Tear the burrata cheese and scatter it over the top of the salad.
  • Sprinkle the toasted walnuts evenly over the salad.

Step 6: Finish with Balsamic Glaze

  • Drizzle 2 tablespoons of balsamic glaze over the entire salad for a sweet and tangy finishing touch.
  • Gently toss the salad to combine the flavors, making sure not to over-mix to preserve the delicate structure of the burrata.

Step 7: Serve and Enjoy

  • Serve the salad immediately for the best texture and flavor. Enjoy it as a light main dish or a hearty side.
